Hard Cut is distilled at 4,790 feet above sea level, high in the Idaho mountains. At this elevation, atmospheric pressure is lower than at sea level, which changes the way alcohol and water behave during distillation. For us, that creates an opportunity to fine-tune the separation of alcohol and water with greater precision.

Precision at altitude

At the heart of the process is a state-of-the-art four-column fractional distillation system. Rather than relying on a single pass through a still, the spirit moves through multiple stages of separation, allowing us to precisely refine the alcohol while controlling the compounds that contribute to the final character of Hard Cut.

The result is a carefully balanced spirit: exceptionally clean and refined, while retaining the subtle texture and character that come from starting with Idaho-grown potatoes. High-altitude distillation doesn't replace craftsmanship; it gives our distillers another variable to work with.
