Many grain-based vodka operations are built around efficiency, with fermentation often completed in roughly 48 hours before the spirit moves on to distillation. Hard Cut takes a different approach. Our potato mash is allowed to ferment for up to five days, giving the yeast more time to transform the starch-derived sugars into alcohol and develop the character that becomes part of the finished spirit.

Time to develop

That extra time matters. Fermentation isn't simply a step on the way to distillation; it is where the foundation of the spirit begins to take shape. By giving our mash more time, we allow the fermentation to develop greater depth and complexity before we ever turn on the still.

It's another example of the Hard Cut philosophy: don't rush the process just because you can. We choose to give the potatoes, the yeast, and the fermentation time to do their work.

The result is a spirit with the clean profile vodka demands, but with the richer texture, subtle character, and smooth finish that set Hard Cut apart.
